Mexico Esmeralda, EA Decaf Natural

This dry-process coffee from Mexico is decaffeinated using the Ethyl Acetate (EA) or “Natural” Decaffeination Process. Ethyl Acetate is a naturally occurring compound found in many vegetables and fruits. For coffee decaffeination, EA is derived from fermented sugar cane (EA is also present in the coffee cherry itself and some coffee farms are even repurposing their cherries to be used in this process) and is then used to remove the caffeine from the green coffee during the washing process.

BREWING RECOMMENDATIONS: This coffee is great on drip, manual brew methods, or espresso, and is soft and sweet with juicy red apple and slightly charred marshmallow upfront and dark chocolate bittersweetness in the finish.

• Recommended brewing ratio of 1:15
  
• 1:2 ratio for espresso

ROASTING INFORMATION: All coffees are roasted, packaged and shipped on Thursdays and Fridays. Our sizes 12 oz. or 5 lb. bag.
